Oreo Truffles and PB Yum Yums!


Oreo Truffles
This recipe was passed on by a friend, as most good ones are!

8 oz. cream cheese, softened

16 oz. oreos, broken into quarters

Enough chocolate to coat... about 2 cups

In large bowl, beat cream cheese for a couple of minutes to smooth out. Add in just over 1/2 of the broken oreos and mix until thoroughly combined. Add in the rest of the oreos and mix just until combined- some bigger pieces are okay. Cover bowl and chill for a few hours, until firm. Scoop out dough and roll into 50-60 balls. Cover and place back in the refrigerator to firm up.

Slowly melt chocolate. Dip each truffle ball and set on wax or parchment paper. Sprinkle confetti on top if desires, or let set and later drizzle white chocolate on top. Store in refrigerator.

My package of Oreos was bigger than 16 oz. so that meant I had to eat a few. Oh shucks!

I make a "double broiler" by placing a glass mixing bowl on top of a sauce pan with an inch or so of boiling water simmering.

Seth is always handy when it's time to taste test! He's only permitted to eat the ugly ones, though!



PB Yum Yums!

These were made up one evening when I had melted chocolate leftover and didn't want to waste it! There's always SOMETHING around that can be dipped!!!

Spread peanut butter between 2 saltines crackers, dunk them in chocolate (a fork is handy for this) and set on wax paper to cool. Sprinkle with confetti right away.

Beware: These are ridiculously yummy and if you make too many, you will get a severe tummy ache from eating them all after your children go to bed!
